Cheesecake is one of my favorite desserts so naturally I had to incorporate all the delicious flavors into a cookie. With a sweet strawberry base topped with rich cream cheese icing, homemade strawberry purée, and graham cracker crumbs, these cookies are so flavorful yet so easy to make.

Equipment
- electric mixer
- OPTIONAL: potato masher (for strawberry jam)
Ingredients for Cookie Base
- 1 stick unsalted butter (softened)
- 1/2 cup granulated sugar
- 1 large egg
- 3 cups + 2 tbs all purpose flour
- 1/2 tsp baking powder
- 2 tsp vanilla extract
Ingredients for Cream Cheese Frosting
- 3 tbs plain cream cheese
- 3 tbs unsalted butter (room temp)
- 2 tbs heavy whipping cream
- 2 tbs powdered sugar
- 2 tbs all purpose flour
- 4 graham crackers crushed up
Strawberry Jam Recipe: Used for Cookie Dough + Topping
- 11 medium strawberries cut into small pieces
- 1 tsp corn starch
- 1 tbs lemon juice


How to Bake
Starting with cookie base + strawberry jam:
- combine the butter and sugar in a bowl and mix together. Ensure the butter isn’t clumped together
- add in the egg and vanilla extract and mix until the batter fluffens up
- add in the flour and baking powder and mix in
- In a pan over medium-high heat, add the chopped strawberries, cornstarch, sugar and lemon juice. Let the ingredients sit over heat for about 10 minutes, making sure to stir gradually. You may need to mash the strawberries up to get the jam to form, but leave some strawberry chunks in there as well
- After the jam cools, add about 2/3 of it into your cookie dough and fold it in.
- If the jam causes your dough o become runny, get a cup of flour and add it GRADUALLY until you get the original consistency back. Do not add all the flour if you don’t need to.
- Form 11 equally sized balls of dough and let them sit in the fridge for 30 minutes-1 hr before baking at 350 for about 25-30 minutes. Check on the cookies continuously as they bake
- While the cookies are in the oven, make your frosting by simply adding the ingredients to a bowl and mixing everything together until the consistency is completely smooth.
- Frost the cookies after they have completely cooled with a generous amount of frosting
- Add a small spoon of the remaining jam on top of the frosting in the center of the cookie, and spread/even it out if needed
- Finally, take your crushed graham crackers and coat the outer border of the frosting layer. Sprinkle some crumbs over the jam as well
