Pumpkin Muffins

Recipe for Muffin Base

  • 1 stick of unsalted butter at room temp
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/4 cup all purpose flour
  • 2 tsp vanilla extract
  • 1 tbs maple syrup/honey
  • 1.5 tsp cinnamon
  • 2 large eggs
  • 3/4 cup pumpkin puree
  • 1 tsp baking powder

Recipe for Topping

  • 2 tbs unsalted butter
  • 1 tbs white sugar
  • 1 tbs brown sugar
  • 2.5 tsp coconut oil
  • 2 tbs white chocolate chips (optional)

How To Bake

  • First combine your butter, white sugar, and brown sugar in a bowl
  • add the eggs, vanilla extract, pumpkin puree, maple syrup, and cinnamon and combine well.
  • Add in the flour and baking powder and combine until your muffin batter forms
  • Spray a muffin/cupcake pan with cooking spray or use cupcake liners before pouring you batter in each spot
  • fill each spot up about 3/4 with the batter
  • In a separate bowl, combine all the ingredients to make the topping and then sprinkle it over the muffins. I recommend adding a little at a time to make sure you don’t run out before topping each muffin!
  • Bake at 350 degrees for 20-23 minutes and Enjoy!
