Recipe for Muffin Base
- 1 stick of unsalted butter at room temp
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 1/4 cup all purpose flour
- 2 tsp vanilla extract
- 1 tbs maple syrup/honey
- 1.5 tsp cinnamon
- 2 large eggs
- 3/4 cup pumpkin puree
- 1 tsp baking powder
Recipe for Topping
- 2 tbs unsalted butter
- 1 tbs white sugar
- 1 tbs brown sugar
- 2.5 tsp coconut oil
- 2 tbs white chocolate chips (optional)
How To Bake
- First combine your butter, white sugar, and brown sugar in a bowl
- add the eggs, vanilla extract, pumpkin puree, maple syrup, and cinnamon and combine well.
- Add in the flour and baking powder and combine until your muffin batter forms
- Spray a muffin/cupcake pan with cooking spray or use cupcake liners before pouring you batter in each spot
- fill each spot up about 3/4 with the batter
- In a separate bowl, combine all the ingredients to make the topping and then sprinkle it over the muffins. I recommend adding a little at a time to make sure you don’t run out before topping each muffin!
- Bake at 350 degrees for 20-23 minutes and Enjoy!
