Super Simple Greek Yogurt Brownies

Recipe

  • 1/2 cup greek yogurt
  • 1 cup oats blended (both steel cut or rolled work)
  • 1 tbs maple syrup/ honey
  • 1/3 cup sweetener of choice (I use splenda)
  • 6 tbs milk of choice
  • 1 tsp baking soda
  • 1 large egg
  • 1/4 tsp salt
  • 1/2 cup cocoa powder
  • 1/3 cup milk chocolate chips

Baking Tips

  • you can use almond flour or all purpose flour instead of blending oats. I recommend adding in the flour a little at a time and mixing in gradually to make sure you get the perfect consistency
  • Other topping options: Oreo chunks, peanut butter cups, frosting (see a recipe below).
  • You could also add in cookie dough to make these into brookies. I’ll link my chocolate chip cookie recipe below!
  • Greek yogurt helps keep the batter a thick consistency so I recommend using it instead of regular yogurt for this recipe

How To Bake

  • combine greek yogurt syrup, milk, and egg in a bowl and mix
  • in a separate bowl combine all the dry ingredients: blended oats, baking powder, cocoa powder, salt
  • add the dry ingredients to the wet ingredients and mix well
  • add in the chocolate chips and any other toppings if you chose
  • Bake at 350 for about 25 minutes and enjoy!
