1/4 cup sugar of choice (I used monk fruit sweetener)
1/2 tsp baking powder
2 tsp Carmel Coffee syrup (you can use vanilla extract or vanilla syrup instead!)
1/4 cup chocolate chips
1 cup almond flour

1/4 cup Cool Whip
1/4 cup Vanilla Greek Yogurt
1 tbs cream cheese
1 tsp Carmel Coffee Syrup (You can use vanilla extract, maple syrup, or anything similar instead!)
1/2 sweetener of choice (I used monk fruit sweetener)
How to Bake
In a bowl, combine the eggs, yogurt, and mashed bananas, and sugar
In a separate bowl, combine your dry ingredients: almond flour, baking powder, cinnamon
Add the dry ingredients to the wet ingredients and mix well
Then, add the maple syrup, Carmel syrup, and chocolate chips
Use oil, butter, coking spray, or cupcakes liners on your cupcake baking pan and pour your batter into each spot evenly
Bake at 350 for 25 minutes!
While the muffins are baking, in a bowl, combine all the whipped topping ingredients and add to your muffins when they finish baking
I chose to add more cinnamon and chocolate chips to top my muffins, you could also top with Reeses pieces, peanut butter chips, a cinnamon sugar mixture (1/2 tsp cinnamon + 1/2 tsp sugar mixed together), or eat them plain.
