Recipe
BASE:
- 3 mashed bananas
- 2 large eggs
- 1/4 cup packed brown sugar
- 1/2 cup all purpose flour
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1 tbs peanut butter
- 1 tbs maple syrup or honey
- 1 tsp cinnamon
- A pinch of sea salt
TOPPINGS:
- 1/4 cup crushed walnuts
- 3/4 of a honey crisp apple peeled
- 2 tbs coconut shreds
- more cinnamon and sea salt (optional)
How To Bake
- In a bowl, mash 3 bananas until there are no clumps
- Add the eggs, vanilla extract, peanut butter, and honey/maple syrup, and brown sugar
- In a separate bowl combine your dry ingredients: flour, brown sugar, sea salt, cinnamon, and baking powder
- Mix the dry ingredients into the wet ingredients and mix well to create your banana bread base
- Finally, pour the batter into a pan and add the walnuts, apples, coconut or other preferred toppings to your batter
- Bake at 350 for 25-30 minutes and enjoy!
